Noun ができます — does が always mean "subject" here?

私は日本語ができます — I thought を was for objects but this sentence uses が for 日本語 which feels like the object to me??

This trips up a lot of English speakers. できる is technically an intransitive verb ("to be possible/able"), so 日本語 is grammatically treated as the thing that "is possible" for you, not a direct object you're acting on. That's why it takes が instead of を. Same logic applies to わかる (understand) and 好き (like) — が not を
